Admittedly, I've only played cases up to the 3-2 twist so far (that's what made me realize - because it was looking like for the first time, it's just going to be a theft case), so I don't know if it's true for ALL the cases in the series - but why exactly all (or most) of them have to be murder cases?

It should be obvious why the game is like that. It's more fulfilling if you have to actually catch the real murderer. In-universe, they state once or twice that crime increased dramatically before the start of Ace Attorney. This is used to explain why every trial only gets three days of court time (which is absolutely insane in real life).

Edgeworth then dismissed Manella and requested a recess so that he could prepare the next witness.
